AlderHood for Pizza Ovens

Everyone who has ever worked in, managed, or owned a pizza restaurant knows that the number one problem in a pizza restaurant kitchen is the excessive heat generated by the pizza ovens, which operate at about 550 degrees.

Problems created by excessive heat and associated air movement in a pizza restaurant kitchen.

  • A typical storefront in a strip mall will need about 5 tons of air conditioning. When a couple of pizza ovens are added to the space, the air conditioning requirement increases to about 25 tons… which is usually still inadequate capacity during peak times. That requires extra investment capital.
  • During peak times, the return temperature of the refrigerant increases above design limits and seriously shortens the life of the air conditioning compressors, causing premature failures. Under-counter refrigerators and freezers also self-destruct due to the high temperature of return refrigerant to their compressors. Make tables have the same problem, and are unable to maintain the temperatures required by health authorities.

Electric utility bills for air conditioning and refrigeration operations are excessively high. Radiant heat in the kitchen increases surface temperatureson worker clothing to about 110 degrees… increasing employee turnover to excessive levels… and increasing all the costs associated with increased turnover.

The excessive air flow from the ovens causes the food on the preparation tables to dry out and spoil prematurely. Food also dries out prematurely in walk-in and reach-in refrigerators.Drying ruins the food and reduces the ability of management to save money by purchasing in larger quantities.

Gluten dust from the pizza dough circulates into the motor and conveyor belt bearings in the pizza ovens creating premature failures. In fact, the heat from the pizza ovens even shortens the lives of the pizza oven controls.

The cost of these problems amounts to about $10,000 to $50,000 or more per year in excess maintenance, employee turnover costs, utility bills, unnecessary air conditioning equipment investment costs, and food costs. Realistic payback for the average purchaser is very quick… in all cases less than a year.
